Healthy Kodubale (കോഡുബളെ) Recipe
Ingredients for 25 Nos:
¼ cup fine sooji/chiroti rava
¼ cup samba wheat flour
1 cup red rice flour
½ teaspoon ajwain seeds
1 teaspoon salt
¼ teaspoon hing/Asafoetida
3/4 cup water
2 to 3 tablespoon oil
Oil for frying
For grinding:
½ cup grated coconut
4 to 5 dried red chilies (more chilies if you want it to be spicy)
Cooking Instructions:
Step 1: Dough making
Heat 2-3 teaspoons of sunflower oil in a pan, add the flours, and warm the mixture. Add salt and knead into a thick smooth dough using warm water. Leave aside to set. Keep it covered
Step 2 Masala Preparation
Grind the coconut and chillies into a fine paste. Add crushed ajwain and powdered hing
Step 3 Kodubale Mixture preparation
Mix the paste into the dough and mix well kneading properly. Heat 3 tablespoons of oil in a ladle, and add the sizzling hot oil to the kodubale mix. Mix well again after the oil cools
Step 4 Kodubale Preparation and frying
Take a lemon-sized piece portion of dough, gently roll it on a cutting board into a thick rope shape, and join the ends to make the rope into 2-inch diameter rings. Deep fry the rings in hot oil on medium heat. The snack does not soak too much oil and become oily. Store in airtight containers once it is cooled down
